When you find a bad banana…

There’s only one thing to do when you find a bad banana. Turn it into a banana loaf! Don’t worry, we’re not about to start moving away from Chocolate making, but thought it might be a good time to share one of our favourite cake recipes!

What you’ll need to have… 

  • 200g ripe bananas (that’s about 2 large ones) 
  • 2tsp lemon or  lime juice (not essential, but nice if you have it) 
  • 200g plain flour 
  • 2tsp baking powder 
  • 1/4tsp salt 
  • 1/4tsp nutmeg 
  • 125g butter or baking alternative 
  • 125g soft brown sugar, or caster sugar if you don’t have soft brown 
  • 1 egg 
  • 1tsp vanilla extract if you have it 
  • optional handful of chocolate chips, or raisins, or nuts.. or all of them! 

What you need to do… 

  • Mash the bananas with the juice 
  • Pre-heat the fan oven to 160dC, grease and line a 1lb loaf tin 
  • Sift together the flour, baking powder and nutmeg 
  • Cream the butter and sugar until light and fluffy 
  • Beat the egg with the extract and add to the sugar mix, beating well 
  • Mix the bananas into the sugar and egg mix 
  • Add the flour in a few batches, mixing well each time to combine 
  • Finally fold in the extras if you’re using them and level out the mixture in the loaf tin 

Bake for approximately 1 hour in the centre of the oven or until a skewer comes out clean. Leave in the tin for 5 mins then remove, cool and enjoy!
